- 4 slices of bacon
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic, minced

- Olive oil
- Pasta, rice, or mashed potatoes for serving
Instructions
- Cook the bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving drippings in the skillet.
- Sear the chicken thighs seasoned with salt and pepper until golden brown, about 5-7 minutes per side. Remove and set aside.
- Sauté garlic and mushrooms in the bacon drippings until mushrooms soften, about 5 minutes.
- Add fresh spinach and cook until wilted, about 2-3 minutes.
- Create the sauce by pouring in chicken broth and heavy cream, stirring to blend.
- Simmer the seared chicken in the sauce until cooked through, about 10-15 minutes.
- Top with crumbled bacon before serving.
- Serve over pasta, rice, or with mashed potatoes.
