Description

Crispy Southwest eggrolls filled with beans, corn, and cream cheese, offering a zesty punch of flavor in every bite.


Ingredients

  • 1 cup Black Beans, drained and rinsed
  • 1 cup Corn, sweet
  • 4 oz Cream Cheese, softened
  • 2 Green Onions, diced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 Jalapeño, diced (optional)

Instructions

  1. Prepare the filling: In a large mixing bowl, combine black beans, corn, cream cheese, green onions, cumin, chili powder and jalapeños. Mix until well combined.
  2. Fill the wrappers: Lay an eggroll wrapper on a clean surface, place two tablespoons of the filling near the center, fold the bottom corner over, tuck in the sides, and roll tightly.
  3. Fry or Bake: Heat oil in a skillet or preheat air fryer. Fry eggrolls until golden brown, about 3-4 minutes per side, or bake at 400°F for 15-20 minutes until crispy.
  4. Serve with your choice of salsa, guacamole, or ranch dressing.

Notes

Make the filling a day in advance for ease. These eggrolls can be customized with different proteins or vegetables.
