Description
A warm and creamy soup bursting with flavors of jalapeños and cheese, served with crispy grilled cheese dippers for an interactive meal experience.
Ingredients
Scale
- 3 tablespoons butter
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup cream cheese
- 1 cup cheddar cheese, shredded
- 1 cup jalapeños, diced (fresh or pickled)
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cheese (e.g., cheddar or American)
Instructions
- Sauté the butter in a large pot over medium heat. Add the diced onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute.
- Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
- Stir in the cream cheese and shredded cheddar cheese until melted smoothly into the pot.
- Fold in the diced jalapeños, adjusting the seasoning with salt and pepper.
- Assemble grilled cheese sandwiches in a skillet with cheese between slices of bread. Cook until golden brown, about 3-4 minutes per side.
- Ladle the soup into bowls and serve with crispy grilled cheese dippers.
Notes
Make-ahead tips: The soup tastes even better the next day. Store in an airtight container and reheat gently. Adjust spice levels by reserving jalapeños as toppings.
