- 2 (10 oz) packages frozen chopped spinach, thawed and drained
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 3 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tbsp olive oil or melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9 x 9-inch baking dish with olive oil or butter.
- In a mixing bowl, combine the thawed spinach, cottage cheese, mozzarella, Parmesan, and sour cream until mixed.
- In another bowl, whisk together the eggs, salt, pepper, garlic powder, and onion powder.
- Pour the egg mixture into the spinach and cheese mixture and stir until fully combined.
- Pour the mixture into the prepared baking dish and smooth it out.
- Bake for 35-40 minutes, or until set and lightly golden on top.
- Let it cool for 5-10 minutes before serving.
Notes
Make ahead by assembling the night before and refrigerate until baking. Can be customized with vegetables or proteins.
