A creamy and delicious Spinach and Cheese Casserole that is perfect for any meal, filling you with comfort and warmth.


Ingredients

  • 2 (10 oz) packages frozen chopped spinach, thawed and drained
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 3 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp olive oil or melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 9-inch baking dish with olive oil or butter.
  3. In a mixing bowl, combine the thawed spinach, cottage cheese, mozzarella, Parmesan, and sour cream until mixed.
  4. In another bowl, whisk together the eggs, salt, pepper, garlic powder, and onion powder.
  5. Pour the egg mixture into the spinach and cheese mixture and stir until fully combined.
  6. Pour the mixture into the prepared baking dish and smooth it out.
  7. Bake for 35-40 minutes, or until set and lightly golden on top.
  8. Let it cool for 5-10 minutes before serving.

Notes

Make ahead by assembling the night before and refrigerate until baking. Can be customized with vegetables or proteins.
