Spinach and Ricotta Stuffed Shells

Description

Comforting pasta shells filled with creamy ricotta and fresh spinach, topped with melty mozzarella and marinara sauce.


Ingredients

  • 12 jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente.
  3. In a mixing bowl, combine chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until creamy.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Stuff each pasta shell with the spinach and ricotta mixture.
  6. Pour the remaining marinara sauce over the stuffed shells.
  7. Sprinkle the remaining mozzarella cheese on top.
  8. Cover with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbling and golden.
  10. Let cool for a few minutes before serving.

Notes

You can prepare the filling a day in advance. Just refrigerate and cover before baking.
