Ingredients

  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 clove Garlic, minced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep the vegetables and ensure they are chopped into uniform, bite-sized pieces.
  3. Season the chickpeas by combining with olive oil, salt, pepper, and spices in a mixing bowl.
  4. Toss all vegetables and chickpeas together in a large bowl with olive oil and minced garlic until evenly coated.
  5. Spread the mixture on a lined sheet pan, leaving space between pieces.
  6. Roast for about 25-30 minutes, tossing halfway through.
  7. Check for doneness; vegetables should be tender and caramelized.
  8. Serve the roasted mix warm and enjoy!
