Instructions
- Preheat Your Oven: Set your oven to 350°F (175°C).
- Cream Butter and Sugars: Cream unsalted butter, granulated sugar, and powdered sugar together until light and fluffy.
- Add Eggs and Extracts: Beat in the eggs, vanilla extract, and almond extract until well combined.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients.
- Chill the Dough: Chill the dough in the fridge for 20-30 minutes.
- Shape the Cookies: Flatten small balls of dough, placing half on a baking sheet.
- Add the Jam: Spoon strawberry jam onto the center of each cookie.
- Top with Second Cookie: Place another flattened cookie on top and pinch the edges to seal.
- Add Sprinkles: Press colorful sprinkles into the top cookie before baking.
- Bake: Bake for 10-12 minutes until the edges are golden brown.
