Delightful cookies that combine the charm of pop tarts with soft sugar cookies, filled with sweet strawberry jam and topped with a beautiful glaze and sprinkles.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup strawberry jam
- 1 cup powdered sugar
- 2 tablespoons milk
- Sprinkles for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add in the egg and vanilla extract, mixing well until fully incorporated.
- In another bowl, combine the flour, baking powder, and salt; gradually mix this dry blend into the butter mixture until well incorporated.
- Scoop tablespoon-sized portions of dough and flatten them slightly.
- Place a small spoonful of strawberry jam in the center of half the cookies, then top with the remaining cookies, sealing the edges gently.
- Place on the prepared baking sheet and bake for 12-15 minutes or until lightly golden.
- Let the cookies cool on the baking sheet for a couple of minutes before transferring to a wire rack.
- In a small bowl, mix powdered sugar with milk to create a smooth glaze. Drizzle this over the cooled cookies and finish with festive sprinkles.
Notes
You can swap the strawberry jam for other flavors like raspberry or blueberry. Allow dough to rest at room temperature before baking if made in advance.
