- 1 cup sweet potatoes, cooked and mashed
- 1/2 cup feta cheese, crumbled
- 12 mini bell peppers
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the mini peppers in half lengthwise and remove the seeds.
- In a bowl, mix the mashed sweet potatoes, feta cheese, olive oil, garlic powder, black pepper, salt, and parsley until well combined.
- Stuff each mini pepper half with the sweet potato and feta mixture.
- Place the stuffed peppers on a baking sheet and bake for 20-25 minutes, or until the peppers are tender.
- Remove from the oven and let cool slightly before serving.
Notes
- Feel free to add other herbs or spices to the filling for extra flavor.
- These can be made ahead of time and reheated before serving.
- For a vegan option, substitute feta with a plant-based cheese.
