Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Oil for frying
- 1 avocado
- 1/4 cup fresh cilantro
- Juice of 1 lime
- 1/2 cup mango chutney
Instructions
- Cook the red lentils in a large pot according to package instructions until they are tender. Drain and set aside.
- Bring water to a boil in a separate pot and add the sweet potatoes. Cook until soft, about 15 minutes. Drain and mash until smooth.
- Combine the mashed sweet potatoes, cooked lentils, onion, garlic, cumin, salt, and pepper in a large mixing bowl. Mix well.
- Form the mixture into small patties, about the size of your palm.
- Heat oil in a frying pan over medium heat and fry the patties until golden brown, about 4-5 minutes per side.
- Blend the avocado, cilantro, lime juice, and salt in a blender until smooth to make the avocado sauce.
- Serve the sweet potato patties warm, drizzled with avocado sauce and topped with mango chutney.

Make-ahead: Prepare the patties and refrigerate them. Fry just before serving for optimal crispness.
