Deliciously crispy Sweet Potato Patties made with red lentils and topped with a tangy tahini dressing.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional)
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water (as needed)
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Boil the Sweet Potatoes: Begin by bringing a large pot of salted water to a boil. Add the cubed sweet potatoes and cook them until tender, about 15 minutes. Drain and mash until smooth.
- Cook the Red Lentils: In the same pot, simmer the rinsed red lentils in fresh water until soft, about 10 minutes. Drain well.
- Sauté the Aromatics: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
- Mix Everything Together: In a large mixing bowl, combine mashed sweet potatoes, cooked lentils, sautéed onion, cumin, salt, and pepper. Optional: stir in breadcrumbs.
- Form the Patties: Shape the mixture into patties of desired size, about ½ inch thick.
- Cook the Patties: Heat oil in the skillet over medium heat. Cook each patty for 4-5 minutes on each side until golden brown.
- Prepare the Tahini Dressing: Whisk tahini, lemon juice, and enough water to achieve a smooth sauce.
- Serve: Arrange patties on a plate, drizzle with tahini dressing and garnish with fresh herbs.
Notes
These patties can be made ahead and stored in the fridge or frozen for later. Air frying is a healthier cooking option.
