Description

A hearty Tater Tot Breakfast Casserole that combines crispy tater tots, savory sausage, crispy bacon, caramelized onions, and melty cheese for the perfect breakfast dish.


Ingredients

  • 1 32 oz bag frozen tater tots
  • 1 lb pork sausage
  • 1 large onion, diced
  • 1/2 lb bacon
  • 2 cups shredded colby jack or cheddar cheese
  • 2 cups milk
  • 6 eggs
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Green onions, diced (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. Spray your 9″x13″ baking dish with non-stick cooking spray.
  3. Combine the frozen tater tots and the shredded cheese in a large mixing bowl.
  4. Cook the sausage and diced onion in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess fat.
  5. Add the sausage and onion mixture to the tater tot and cheese bowl.
  6. Fry the bacon until crispy, crumble and add it to the tater tot mixture.
  7. Spread the tater tot mixture into your prepared baking dish.
  8. Whisk together milk, eggs, garlic powder, onion powder, cayenne pepper, salt, and pepper until smooth, then pour over the tater tot mixture.
  9. Bake for about 60 minutes or until the eggs are set and the top is golden.
  10. Remove from the oven and garnish with diced green onions, if desired.

Notes

Assemble the casserole the night before and store it in the fridge for quick baking in the morning.
