- 1 pound chicken breast, cubed
- 8 oz white button or cremini mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup frozen peas
- 1/2 cup parmesan cheese (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the chicken in a large skillet over medium-high heat with a splash of olive oil, seasoning with salt and pepper, about 6-8 minutes.
- Sauté onions and garlic until translucent, about 2-3 minutes.
- Add sliced mushrooms and cook until softened, about 4-5 minutes.
- Pour in chicken broth and cream, and let simmer for 5 minutes to thicken.
- Fold in frozen peas and transfer mixture to a baking dish.
- Sprinkle cheese on top if using.
- Bake for 25-30 minutes or until bubbly and golden on top.
Notes
