- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup brewed coffee, cooled
- 1/2 cup cocoa powder
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter until they resemble wet sand. Press this mixture firmly into the bottom of your springform pan.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth.
- Add in the vanilla extract and eggs, one at a time, mixing until fully combined.
- Gradually blend in the cooled coffee and cocoa powder until well incorporated.
- Pour the cream cheese mixture over the prepared crust, smoothing the top with a spatula.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Once cooled, allow it to cool completely at room temperature, then refrigerate for at least 4 hours, ideally overnight.
- Before serving, whip the heavy cream with powdered sugar until soft peaks form and spread over the cheesecake. Garnish with chocolate shavings.
