Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup brewed coffee, cooled
  • 1/2 cup cocoa powder
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter until they resemble wet sand. Press this mixture firmly into the bottom of your springform pan.
  3. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth.
  4. Add in the vanilla extract and eggs, one at a time, mixing until fully combined.
  5. Gradually blend in the cooled coffee and cocoa powder until well incorporated.
  6. Pour the cream cheese mixture over the prepared crust, smoothing the top with a spatula.
  7. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  9. Once cooled, allow it to cool completely at room temperature, then refrigerate for at least 4 hours, ideally overnight.
  10. Before serving, whip the heavy cream with powdered sugar until soft peaks form and spread over the cheesecake. Garnish with chocolate shavings.
