Instructions
- Prep the zucchini: Grate the zucchini and squeeze out excess moisture using cheesecloth or a clean kitchen towel.
- Mix the ingredients: Combine grated zucchini with the egg, Parmesan cheese, cornstarch, salt, and pepper, mixing until it holds together.
- Heat the skillet: Melt garlic butter in a non-stick skillet over medium heat.
- Shape and cook the patties: Form patties from the mixture and cook for 3–4 minutes on each side until golden brown.
- Add the cheese: Place shredded Cheddar on one patty and top with the second. Cook for an additional 3 minutes to melt the cheese.
