A delicious and healthy twist on pizza, this zucchini pizza casserole combines layers of zucchini, savory ground meat, marinara sauce, and gooey mozzarella cheese for a comforting meal.

- 4 medium zucchinis, sliced
- 1 lb ground turkey or beef
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1 medium onion, chopped
- 1 bell pepper, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly spray a large baking dish with nonstick cooking spray.
- In a skillet over medium heat, add your ground turkey (or beef) and cook until golden brown, about 5-7 minutes. Drain excess fat.
- Stir in the Italian seasoning.
- Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until softened.
- In the prepared baking dish, layer half of the zucchini slices at the bottom. Spread half of the meat mixture over the zucchini, followed by half of the marinara sauce.
- Add another layer of zucchini slices, the remaining meat mixture, and top with the remaining marinara sauce.
- Sprinkle the shredded mozzarella evenly over the top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the cheese is golden brown and bubbly.
- Let it rest for a few minutes before serving.
Notes
You can prepare the casserole a day in advance and refrigerate it unbaked. For a vegetarian version, substitute ground meat with a plant-based protein.
