Description

Apple Cider Braised Short Ribs are a delicious and hearty dish that combines tender beef short ribs with the sweet and tangy flavors of apple cider, creating a comforting meal perfect for any occasion.


Ingredients

  • 4 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
  4. Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery, and sauté until softened.
  5. Add the apple cider, thyme, and bay leaf, scraping up any browned bits from the bottom of the pot.
  6. Return the short ribs to the pot, cover, and transfer to the oven.
  7. Braise for 3 hours or until the meat is tender and falling off the bone.
  8. Remove from the oven, discard the bay leaf, and serve the ribs with the sauce.

Notes

  • For a richer flavor, you can add a splash of balsamic vinegar to the braising liquid.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
