Ingredients
- Pork medallions or chops
- Apple cider
- Garlic, minced
- Fresh thyme or rosemary
- Butter, unsalted
- Sweet potatoes
- Salt and pepper
- Milk or cream
Instructions
- Season the pork medallions with salt and pepper on both sides. Melt butter in a skillet over medium heat and sear the pork until golden-brown, about 4–5 minutes per side.
- Add minced garlic and herbs, letting them release their oils. Pour in the apple cider and bring to a simmer, cooking until the pork is cooked through and the sauce thickens, about 5–7 minutes.
- Peel and chop sweet potatoes, cook in salted boiling water until tender, about 15 minutes.
- Drain sweet potatoes, mash them with milk or cream until smooth, and season with salt and pepper.
- Plate the mashed sweet potatoes, top with the pork, and drizzle with the apple cider sauce. Garnish with fresh herbs.
Notes
Pork can be made ahead and reheated before serving. Experiment with spices for a festive twist.
