  • 1/4 cup of ice water
  • 2 cups of apples, peeled and diced
  • 1/2 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1 tablespoon of lemon juice
  • 1 egg, beaten (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Prepare the Pastry: In a mixing bowl, combine flour and salt, blending well. Add the cold cubed butter, using a pastry cutter, and mix until the mixture resembles coarse crumbs. Gradually stir in the ice water until the dough holds together. Wrap the dough in plastic wrap, pressing it into a disk, and refrigerate for 30 minutes.
  2. Make the Filling: In another bowl, combine your diced apples, brown sugar, cinnamon, and lemon juice. Mix until the apples are well-coated. Let this rest while the dough chills.
  3. Roll Out the Dough: Preheat your oven to 350°F (175°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a circle cutter or a glass with a 4-5 inch diameter to cut the dough into circles.
  4. Fill and Shape the Empanadas: Place a spoonful of apple mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges tightly.
  5. Bake to Perfection: Arrange the empanadas on a parchment-lined baking sheet. Brush the tops with the beaten egg. Bake for 25-30 minutes or until golden brown.
  6. Finishing Touches: Allow empanadas to cool slightly before dusting with powdered sugar. Serve warm.
