Description
A refreshing and nutritious salad made with quinoa, apples, walnuts, and a sweet maple dressing.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup feta cheese (optional)
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
- Once cooked, fluff the quinoa with a fork and let it cool.
- In a large bowl, combine the cooled quinoa, diced apple, chopped walnuts, and dried cranberries.
- In a separate bowl, whisk together olive oil, maple syrup, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If using, sprinkle feta cheese on top before serving.
Notes
- For a vegan option, omit the feta cheese.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
- Feel free to add other ingredients like spinach or kale for extra greens.
