Description

A refreshing and nutritious salad made with quinoa, apples, walnuts, and a sweet maple dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Once cooked, fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine the cooled quinoa, diced apple, chopped walnuts, and dried cranberries.
  5. In a separate bowl, whisk together olive oil, maple syrup, apple cider vinegar, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. If using, sprinkle feta cheese on top before serving.

Notes

  • For a vegan option, omit the feta cheese.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
