- 2 cups desiccated coconut
- 1 cup sweetened condensed milk
- 1 cup icing sugar
- 1/2 cup butter, melted
- 1/2 teaspoon vanilla extract
- Red food coloring (optional)
Instructions
- In a large bowl, combine the desiccated coconut, icing sugar, and melted butter.
- Add the sweetened condensed milk and vanilla extract, mixing until well combined.
- If desired, divide the mixture in half and add red food coloring to one half.
- Press the white mixture into a lined square baking dish, followed by the colored mixture on top.
- Refrigerate for at least 2 hours or until set.
- Cut into squares and serve.
Notes
- Store in an airtight container in the refrigerator.
- Can be made ahead of time and stored for up to a week.
- Feel free to adjust the sweetness by adding more or less icing sugar.
