Description

Baked Cod with Tomatoes, Olives, and Capers is a delicious and healthy dish that combines the flavors of fresh tomatoes, briny olives, and tangy capers with tender cod fillets, making it a must-try for seafood lovers.


Ingredients

  • 4 cod fillets
  • 2 cups cherry tomatoes, halved
  • 1/2 cup olives, pitted and sliced
  • 2 tablespoons capers, rinsed
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes, olives, capers, and garlic.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Place the cod fillets on top of the tomato mixture.
  5. Drizzle a little more olive oil over the cod and season with additional salt and pepper.
  6. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. Garnish with fresh parsley before serving.
