Description

Deliciously baked Parmesan zucchini slices with a crispy breadcrumb coating, perfect as a side dish or snack.


Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini into 1/4-inch rounds.
  3. Mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in a mixing bowl.
  4. Dip each zucchini slice into the mixture, coating both sides evenly.
  5. Place the coated slices on a baking sheet lined with parchment paper.
  6. Drizzle olive oil over the zucchini slices.
  7. Bake for 15-20 minutes, or until golden and crispy.
  8. Serve warm as a side dish.
