Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchini into 1/4-inch rounds.
- Mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in a mixing bowl.
- Dip each zucchini slice into the mixture, coating both sides evenly.
- Place the coated slices on a baking sheet lined with parchment paper.
- Drizzle olive oil over the zucchini slices.
- Bake for 15-20 minutes, or until golden and crispy.
- Serve warm as a side dish.
