Description

A delicious and healthy dish featuring baked chicken meatballs infused with sage, served over creamy Parmesan orzo.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp fresh sage, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup additional grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, sage, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through.
  5. Meanwhile, in a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions.
  6. Once the orzo is cooked, stir in heavy cream and additional Parmesan cheese until creamy.
  7. Serve the meatballs over the Parmesan orzo and garnish with fresh parsley.

Notes

  • For a lighter version, use ground turkey instead of chicken.
  • Feel free to add vegetables to the orzo for extra nutrition.
