Ingredients

  • 2 large zucchini – Thinly sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 cup marinara sauce
  • Salt and pepper to taste
  • Olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, salt, and pepper. Mix gently until creamy.
  3. Lay the zucchini slices on a flat surface and place a spoonful of the cheese mixture at one end of each slice.
  4. Roll up the zucchini slices tightly and place them in a baking dish seam side down.
  5. Pour marinara sauce over the zucchini rolls and sprinkle with extra mozzarella if desired.
