- 2 large zucchini – Thinly sliced lengthwise
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 cup marinara sauce
- Salt and pepper to taste
- Olive oil
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, salt, and pepper. Mix gently until creamy.
- Lay the zucchini slices on a flat surface and place a spoonful of the cheese mixture at one end of each slice.
- Roll up the zucchini slices tightly and place them in a baking dish seam side down.
- Pour marinara sauce over the zucchini rolls and sprinkle with extra mozzarella if desired.
- Drizzle with olive oil for added richness.
