Ingredients

  • 4 salmon fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper.
  3. Coat each salmon fillet with the sauce mixture.
  4. Press the panko breadcrumbs onto the salmon fillets to create a crust.
  5. Heat olive oil in a skillet over medium heat and sear the salmon fillets for 2-3 minutes on each side.
  6. Transfer the salmon to a baking dish and bake in the preheated oven for 10-12 minutes or until cooked through.
  7. Serve with extra sauce on the side and enjoy!

Notes

  • For extra crunch, broil the salmon for the last 2 minutes of cooking.
