Description

Delicious BBQ pulled pork stuffed in bell peppers, perfect for a hearty meal.


Ingredients

  • 4 large bell peppers
  • 2 cups cooked pulled pork
  • 1 cup BBQ sauce
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the pulled pork with BBQ sauce, onions, cilantro, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25 minutes, then remove the foil and sprinkle cheese on top.
  7. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

  • Feel free to use any color of bell peppers.
  • Leftover pulled pork works great for this recipe.
  • Adjust the amount of BBQ sauce based on your taste preference.
