Delicious BBQ pulled pork stuffed in bell peppers, perfect for a hearty meal.
Ingredients

- 4 large bell peppers
- 2 cups cooked pulled pork
- 1 cup BBQ sauce
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the pulled pork with BBQ sauce, onions, cilantro, salt, and pepper.
- Stuff the mixture into each bell pepper.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove the foil and sprinkle cheese on top.
- Bake for an additional 10 minutes or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to use any color of bell peppers.
- Leftover pulled pork works great for this recipe.
- Adjust the amount of BBQ sauce based on your taste preference.
