Instructions
- Cook the bacon in a frying pan over medium heat for 4-6 minutes per side until crispy. Drain on paper towels.
- Caramelize the onions in the same pan with a pinch of salt over low heat for 15-20 minutes until golden brown.
- Mix the chipotle mayo in a bowl, adjusting the spice to your preference.
- Assemble the sandwich by toasting the bread, spreading the chipotle mayo, layering the bacon, caramelized onions, and arugula, then topping with the other slice of bread.
- Serve immediately, cut in half for easy handling.
Notes
For a lighter option, substitute bacon with turkey bacon or thick-cut prosciutto. You can also prepare the bacon and onions in advance for quick assembly later.
