Ingredients

  • 1 cup bell peppers, chopped

  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt, pepper, and paprika, then brown them in the skillet for about 5 minutes on each side.
  3. Remove chicken and set aside. In the same skillet, add onions, garlic, and bell peppers, sautéing until softened.
  4. Add rice to the skillet and stir for 1-2 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Return chicken to the skillet, cover, and reduce heat to low. Simmer for 25-30 minutes until rice is cooked and chicken is tender.
  7. Serve hot and enjoy!
