Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix Biscoff cookie crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Add powdered sugar, vanilla extract, ginger, cinnamon, and nutmeg; mix until well combined.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Bake for 45-50 minutes or until the center is set.
