- 2 large eggs
- 1/2 cup milk
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
- Zest of 1 lemon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners or greasing it lightly.
- Combine the cottage cheese, eggs, milk, honey (or maple syrup), and vanilla extract in a mixing bowl. Mix thoroughly until well blended.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the blueberries and lemon zest.
- Spoon the batter evenly into muffin cups, filling them about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack to cool completely.
Notes
Make ahead by preparing the batter the night before and refrigerating it. Avoid overmixing the batter to prevent tough muffins.
