Ingredients

- 4 cups mixed salad greens (e.g., baby spinach or arugula)
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Begin by rinsing the salad greens under cold water and drying them.
- Place the greens in a large salad bowl.
- Slice the red onion thinly and scatter it over the greens.
- Mix together the olive oil, honey, balsamic vinegar, mustard, salt, and pepper in a small bowl.
- Pour the dressing over the greens and onions, and gently toss to coat.
- Carefully fold in the blueberries, pistachios, and feta cheese.
- Serve immediately, garnished with extra pistachios.
Notes
Dressing can be made in advance and stored in the fridge for up to a week. Toss salad components just before serving to maintain freshness.
