Delicious and moist pumpkin donuts glazed with a rich brown butter maple icing.

- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, mix together pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill the donut pan with the batter and bake for 15-18 minutes or until a toothpick comes out clean.
- While the donuts are baking, prepare the brown butter maple glaze by melting butter in a saucepan until it turns golden brown, then whisk in maple syrup and powdered sugar until smooth.
- Once the donuts are cool, dip them in the glaze and let it set before serving.
Notes
- Store leftover donuts in an airtight container for up to 3 days.
- For a richer flavor, use dark brown sugar in the glaze.
- These donuts can be frozen for up to 2 months.
