Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin spice, and salt.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the pumpkin puree, milk, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick.
  7. Cut the dough into wedges and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
  9. While the scones are baking, prepare the glaze by mixing powdered sugar and milk until smooth.
  10. Once the scones are cool, drizzle the glaze over the top and serve.

Notes

  • For a richer flavor, use dark brown sugar.
  • Store leftover scones in an airtight container for up to 3 days.
  • These scones can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
