- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 2 cups cherry tomatoes, halved
- 3 garlic cloves, minced
- 2 tbsp balsamic vinegar
- 1 tbsp tomato paste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the chicken: In a large skillet, heat olive oil over medium heat. Add chicken pieces, seasoning with Italian seasoning, garlic powder, onion powder, salt, and black pepper. Sauté for 6-8 minutes until golden and cooked through.
- Add the halved cherry tomatoes, minced garlic, balsamic vinegar, and tomato paste. Continue cooking for 2-3 minutes.
- Transfer the chicken and tomato mix to a casserole dish, spreading evenly.
- Add shredded mozzarella and grated Parmesan cheese on top.
- Bake for 20-25 minutes until cheese bubbles and turns golden brown.
- Garnish with fresh basil and parsley before serving.
Notes
Make ahead by preparing chicken and tomato mixture a day in advance. For quick cooking, use an air fryer.
