Description

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 2 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 2 tbsp balsamic vinegar
  • 1 tbsp tomato paste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chicken: In a large skillet, heat olive oil over medium heat. Add chicken pieces, seasoning with Italian seasoning, garlic powder, onion powder, salt, and black pepper. Sauté for 6-8 minutes until golden and cooked through.
  3. Add the halved cherry tomatoes, minced garlic, balsamic vinegar, and tomato paste. Continue cooking for 2-3 minutes.
  4. Transfer the chicken and tomato mix to a casserole dish, spreading evenly.
  5. Add shredded mozzarella and grated Parmesan cheese on top.
  6. Bake for 20-25 minutes until cheese bubbles and turns golden brown.
  7. Garnish with fresh basil and parsley before serving.

Notes

Make ahead by preparing chicken and tomato mixture a day in advance. For quick cooking, use an air fryer.
