- 4 slices of bread
- 1 cup fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a bowl, combine diced cherry tomatoes, chopped basil, balsamic vinegar, olive oil, salt, and pepper to make the bruschetta topping.
- Heat a skillet over medium heat and butter one side of each slice of bread.
- Place one slice of bread, buttered side down, in the skillet and layer with mozzarella cheese and bruschetta topping.
- Top with another slice of bread, buttered side up, and grill until golden brown, about 3-4 minutes.
- Flip the sandwich and grill the other side until the cheese is melted and the bread is golden brown.
- Remove from skillet, slice, and serve warm.
