Description

A refreshing and nutritious salad made with bulgur wheat, feta cheese, cucumbers, and fresh dill, perfect for a light meal or side dish.


Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 cup diced cucumbers
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the bulgur wheat under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the bulgur wheat.
  3. Cover and simmer for about 12-15 minutes until the bulgur is tender and water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine the cooled bulgur, diced cucumbers, crumbled feta, and chopped dill.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve chilled or at room temperature.

Notes

  • For added flavor, you can include cherry tomatoes or bell peppers.
  • This salad can be made a day in advance and stored in the refrigerator.
  • Adjust the amount of feta cheese according to your taste preference.
