Description

Ingredients

- 1 cup bulgur wheat
- 2 cups water
- 1 cup diced cucumbers
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the bulgur wheat under cold water.
- In a pot, bring 2 cups of water to a boil and add the bulgur wheat.
- Cover and simmer for about 12-15 minutes until the bulgur is tender and water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine the cooled bulgur, diced cucumbers, crumbled feta, and chopped dill.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, you can include cherry tomatoes or bell peppers.
- This salad can be made a day in advance and stored in the refrigerator.
- Adjust the amount of feta cheese according to your taste preference.
