- 4 boneless, skinless chicken breasts
- 1 cup butternut squash, peeled and diced
- 1/2 cup cooked quinoa
- 1/4 cup fresh sage, chopped
- 1/2 cup cream cheese, softened
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the diced butternut squash, cooked quinoa, chopped sage, cream cheese, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the butternut squash mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.

- For added flavor, consider marinating the chicken breasts for a few hours before stuffing.
