Instructions
- Preheat the oven to 350°F (175°C).
- Mix wet ingredients in a large bowl: combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until fluffy.
- Prepare dry ingredients: in another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Incorporate dry into wet: gradually add the dry mixture to the wet ingredients, mixing gently.
- Fold in the chopped pecans using a rubber spatula.
- Pour the batter into a greased 9×13 inch baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow the bars to cool completely before spreading caramel sauce on top.
