- 2 slices of bread
- 1/2 cup goat cheese
- 1 medium onion, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Butter for grilling
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the sliced onions and season with salt and pepper.
- Cook the onions, stirring occasionally, until they are caramelized, about 15-20 minutes.
- Spread goat cheese on one side of each slice of bread.
- Layer the caramelized onions on top of the goat cheese on one slice of bread.
- Top with the other slice of bread, cheese side down.
- Butter the outside of the sandwich.
- Grill the sandwich in a skillet over medium heat until golden brown and crispy, about 3-4 minutes per side.
- Slice and serve warm.
