Ingredients

- 2 cups red bell peppers, chopped
- 1 cup sugar
- 1 cup apple cider vinegar
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh ginger
- 2–3 fresh red chili peppers, chopped (adjust for heat preference)
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
Instructions
- In a large pot, combine the chopped red bell peppers, sugar, apple cider vinegar, and lime juice.
- Add the chopped ginger, red chili peppers, salt, and garlic powder to the pot.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Once boiling, reduce the heat and let it simmer for about 30 minutes, or until the mixture thickens.
- Pour the hot jam into sterilized jars and seal them while hot.
- Allow the jam to cool completely before storing it in the refrigerator.
Notes
- This jam pairs well with grilled meats, cheese platters, and as a spread on sandwiches.
- Adjust the number of chili peppers based on your heat preference.
- Store in the refrigerator for up to 3 months.
