Instructions
- Start by ricing the cauliflower using a food processor or grater.
- In a large bowl, combine the riced cauliflower, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a separate bowl, whisk together the olive oil, lemon juice, tahini, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the cauliflower mixture and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
