Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons tahini
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Start by ricing the cauliflower using a food processor or grater.
  2. In a large bowl, combine the riced cauliflower, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a separate bowl, whisk together the olive oil, lemon juice, tahini, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the cauliflower mixture and toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
