- 1 large head of cauliflower
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup plain yogurt
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon lemon juice
- 1/2 cup pomegranate seeds
Instructions
- Preheat the grill to medium-high heat.
- Remove the leaves from the cauliflower and slice it into 1-inch thick steaks.
- Brush both sides of the cauliflower steaks with olive oil and season with salt and pepper.
- Grill the cauliflower steaks for about 5-7 minutes on each side, until tender and charred.
- In a bowl, mix the yogurt, parsley, mint, and lemon juice to create the herbed yogurt sauce.
- Once the cauliflower steaks are done, remove them from the grill and place them on a serving platter.
- Drizzle the herbed yogurt sauce over the steaks and sprinkle with pomegranate seeds before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the yogurt sauce.
- These steaks can also be roasted in the oven at 425°F for 25-30 minutes if a grill is not available.
- Leftover herbed yogurt sauce can be used as a dip for vegetables or spread on sandwiches.
