A delicious and healthy dish featuring charred cauliflower drizzled with turmeric tahini and topped with pomegranate seeds.
Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tahini
- 1 tablespoon turmeric powder
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- 1/4 cup water
- 1/2 cup pomegranate seeds
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and black pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until charred and tender.
- In a bowl, whisk together tahini, turmeric, lemon juice, maple syrup, and water until smooth.
- Once the cauliflower is done, drizzle the turmeric tahini sauce over it.
- Top with pomegranate seeds before serving.
Notes
- For extra flavor, add garlic powder to the cauliflower before roasting.
- Adjust the consistency of the tahini sauce by adding more or less water.
- This dish can be served warm or at room temperature.
