Description

A delicious and healthy dish featuring charred cauliflower drizzled with turmeric tahini and topped with pomegranate seeds.


Ingredients

Scale
  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tahini
  • 1 tablespoon turmeric powder
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1/4 cup water
  • 1/2 cup pomegranate seeds

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until charred and tender.
  4. In a bowl, whisk together tahini, turmeric, lemon juice, maple syrup, and water until smooth.
  5. Once the cauliflower is done, drizzle the turmeric tahini sauce over it.
  6. Top with pomegranate seeds before serving.

Notes

  • For extra flavor, add garlic powder to the cauliflower before roasting.
  • Adjust the consistency of the tahini sauce by adding more or less water.
  • This dish can be served warm or at room temperature.
