A delicious seafood pot pie topped with Cheddar Bay biscuits, combining rich flavors and a comforting texture.


Ingredients

  • 1 cup cooked seafood (shrimp, crab, or lobster)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Old Bay seasoning
  • 1 package Cheddar Bay biscuit mix
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
  3. Add seafood stock and heavy cream, whisking until smooth. Bring to a simmer.
  4. Stir in cooked seafood, mixed vegetables, garlic powder, onion powder, and Old Bay seasoning. Cook for 5 minutes.
  5. Transfer the seafood mixture to a baking dish.
  6. Prepare Cheddar Bay biscuit mix according to package instructions and drop spoonfuls over the seafood mixture.
  7. Sprinkle shredded cheddar cheese on top of the biscuits.
  8. Bake for 20-25 minutes or until biscuits are golden brown.
  9. Let cool for a few minutes before serving.

Notes

  • Feel free to use any combination of seafood you prefer.
  • For a spicier kick, add some cayenne pepper to the seafood mixture.
  • This dish can be made ahead of time and baked just before serving.
