Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup ranch dressing
- 2 tablespoons chopped green onions
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Bake the potatoes for about 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
- Brush the potato skins with olive oil and season with salt and pepper.
- Bake the skins for an additional 10-15 minutes until crispy.
- Remove from the oven and fill each skin with cheese and bacon.
- Return to the oven and bake until the cheese is melted.
- Drizzle with ranch dressing and sprinkle with green onions before serving.
Notes
- For extra flavor, you can add jalapeños or other toppings of your choice.
- These can be made ahead of time and reheated in the oven.
