- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can diced tomatoes (with juice)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Heat olive oil in a skillet over medium heat.
- Sauté the onion and garlic until fragrant.
- Add the ground beef and cook until browned, then drain excess fat.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Fill each bell pepper with the beef mixture and top with shredded cheese.
- Place the filled peppers in a baking dish with a splash of water at the bottom.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
- Serve hot and enjoy the gooey, cheesy goodness.
