  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes (with juice)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat.
  4. Sauté the onion and garlic until fragrant.
  5. Add the ground beef and cook until browned, then drain excess fat.
  6. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  7. Fill each bell pepper with the beef mixture and top with shredded cheese.
  8. Place the filled peppers in a baking dish with a splash of water at the bottom.
  9. Cover with foil and bake for 25-30 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
