- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded cheese (mozzarella or cheddar)
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt butter over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Add chopped mushrooms and sauté until tender and golden brown.
- In a bowl, combine the sautéed mushroom mixture with cream cheese and half of the shredded cheese.
- Cut a pocket into each chicken breast.
- Stuff each chicken breast with the mushroom and cheese mixture.
- Place the stuffed chicken breasts in a baking dish and pour any leftover filling over them.
- Top with the remaining shredded cheese.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Consider using an air fryer for quicker cooking or adding spinach for extra nutrition.
