Description

Delicious and cheesy quesadillas filled with spinach and mushrooms, perfect for a quick meal or snack.


Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms and sauté until they are soft.
  3. Add fresh spinach and cook until wilted.
  4. Season with salt and pepper.
  5. Place a tortilla in the skillet, sprinkle half with cheese, and add the spinach and mushroom mixture.
  6. Fold the tortilla in half and cook until golden brown on both sides.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.
