Description
A delightful combination of succulent steak and tender shrimp, enveloped in gooey melted cheese and served in a crispy baked potato.
Ingredients

- 2 large russet potatoes
- 1 cup cooked steak, diced
- 1 cup cooked shrimp, peeled and deveined
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake in the oven for 45-60 minutes until tender.
- While the potatoes are baking, prepare the steak and shrimp if not already cooked.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut the potatoes in half lengthwise and scoop out some of the flesh.
- In a bowl, mix the steak, shrimp, cheddar cheese, sour cream, butter, salt, and pepper.
- Fill the potato skins with the mixture and top with additional cheese if desired.
- Return the filled potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
- Garnish with sliced green onions before serving.
Notes
Prep the filling the night before for a quicker cook time. Customize toppings to suit your taste.
