Cheesy Steak and Shrimp Loaded Baked Potato

Description

A delightful combination of succulent steak and tender shrimp, enveloped in gooey melted cheese and served in a crispy baked potato.


Ingredients

  • 2 large russet potatoes
  • 1 cup cooked steak, diced
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake in the oven for 45-60 minutes until tender.
  3. While the potatoes are baking, prepare the steak and shrimp if not already cooked.
  4. Once the potatoes are done, remove them from the oven and let them cool slightly.
  5. Cut the potatoes in half lengthwise and scoop out some of the flesh.
  6. In a bowl, mix the steak, shrimp, cheddar cheese, sour cream, butter, salt, and pepper.
  7. Fill the potato skins with the mixture and top with additional cheese if desired.
  8. Return the filled potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  9. Garnish with sliced green onions before serving.

Notes

Prep the filling the night before for a quicker cook time. Customize toppings to suit your taste.
